Katherine Mithoefer of Merrimack, NH passed away peacefully at the age of 69 on Tuesday March 12th, 2024 at Brigham & Women's Hospital in Boston, MA . Kathy was an inspiration in her battle against ovarian cancer and leukemia. She is forever loved by her husband of 47 years, Randall Mithoefer, and their three sons Scott, Kurt, and Trent.
Born in Wilmington, DE on February 24th, 1955, Kathy was the daughter of Elwood and Virginia Beach. She graduated from Blackford High School in Hartford City, IN and received her Bachelor's degree from Indiana State University in Terre Haute, IN. Kathy dedicated her life to caring for and helping others as a Recreational Therapist for almost 40 years at Parkview Hospital in Fort Wayne, IN and St Joseph Hospital in Nashua, NH, before retiring in 2019.
Kathy's life was anchored in her love for family, baking, crafting, gardening, and traveling the American Southwest with her husband Randy. Most of the year, she enjoyed her time in New England and was an avid New England sports fan - GO Sox, Pats, and Bruins!!! Her famous sugar cookies, affectionally known as "Kathy's Cookies", were sold at a local farm stand, and she greatly enjoyed her time building her dream garden with Randy. The remaining time of the year was spent in Arizona where Kathy and Randy would ride horseback, tour canyons, and explore the special sites they found and loved together.
Most importantly, Kathy was a remarkable woman who loved her family and friends more than anything. She embraced every moment with them and will continue to be carried in the hearts of her husband Randy; son Scott and his partner Angie; son Kurt, his wife Nichole, and their three children Zac (8), Claire (6), and Ella (3); and son Trent. She is preceded in death by her mother and survived by her father and siblings.
A celebration of life will be held privately at the family's convenience. In lieu of flowers or gifts, those who wish may make a memorial contribution to Dana Farber Cancer Institute, in honor of Katherine Mithoefer, to support cancer research and patient care via dana-farber.org/gift
